The Bodaczów shredded potato dish tarciuch served with smoked bacon and summer sauce

An old Polish style dish

Ingredients

  • Sokołów smoked bacon
  • 1 kg potatoes
  • 4 tablespoons wheat flour
  • 2 eggs
  • Salt and pepper to taste
  • 200 g cottage cheese
  • Sauce:
  • Greek yoghurt
  • Fresh cucumbers, dill
  • Garlic, salt and pepper

DIRECTIONS:

Peel and shred the potatoes on a shredder. Add flour, eggs and seasonings. For better taste add cottage cheese or smoked bacon – diced and fried. Mix all ingredients, put them into a baking tray and bake in the oven for at least an hour.

SAUCE:

Shred the cucumbers (you can remove the seeds beforehand). Add the cucumbers to the yoghurt, then add salt, pepper and squeezed garlic, sprinkle with cut-up dill. Mix all ingredients.

This is a recipe for a dish prepared in the workshop “Cooking and literature” during the 2nd Festival The Capital of the Polish Language in Szczebrzeszyn.

The workshop was run jointly with the Country Housewives' Club from Bodaczów.
